Red Star® All Natural ctive Dry Yeast is a strain of Saccharomyces cerevisiae. Once the propagation of the yeast is complete, the product is washed 3 times with potable water to remove any remnants of the growth media. *Red Star All Natural Active Dry Yeast can be used in all yeast-leavened goods with either straight or sponge doughs. Yeast should be rehydrated with a minimum of 3.5–4 times its weight in water at 100°–110°F (38°–43°C).

Packaging: Comes in 50 lb (22 kg 680 g) packages; convenient for large mixers. Vacuum packaging ensures freshness, consistency, and minimal activity loss until opened
Applications: Bagels, Crusty Bread, Hispanic Products, Multigrain Bread, Pizza, Pretzels, Rolls & Buns, Sourdough, Specialty, Whole Wheat, Crackers, Donuts, Pan Bread, Sweet Bread, Tortilla & Flatbread
Usage: Use at 1.0–3.0% of the total flour weight. Example: 1–3 lbs of Red Star All Natural Active Dry Yeast per 100 lb of flour (200–600 g Red Star All Natural Active Dry Yeast for 20 kg of flour).
Shelf life: 18 months from production date (unopened). Refrigerate after opening at 45 ºF (7 ºC) and seal well. Allow product to temper to room temperature prior to rehydration and use after refrigeration. Refrigeration is not required for unopened packages.
